Jamaicans Abroad (Jacansabroad) is a registered LLC company under the Companies Act of Trinidad and Tobago as at February 2017.

Jacansabroad seeks to bring Jamaicans living and working abroad together, to share their experience and help with transition of living outside of Jamaica. By providing a community where we can showcase the positive aspects of the Jamaican culture, promote the businesses and services of Jamaicans and provide a range of support services for Jamaican students and professionals.

This organization is also involved in advancing the agenda of the Caribbean Single Market Economy as a viable way of developing the region and our citizens.

Ackee and Salfish


Directions
  • Wash off all the salt from the salted cod fish in cold water, and then soak as follows: Soak for 1 hour in hot water, and then drain and replace with a new batch of hot water for another hour. The fish will be soaked for a total of 2 hours.

  • Heat the oil in a medium skillet over medium heat and then add the chopped garlic and cook for 30 seconds. Add the sprig of thyme and cook for 30 seconds. Add the onions, scallions, bell peppers, and Scotch bonnet pepper and cook for 5 minutes. Stir the entire mix as needed. Add the prepared codfish to the skillet and simmer for 5 minutes, stirring as needed. Add the ackee to the skillet and simmer for another 2 minutes. Stir in the black pepper and turn off the stove. Garnish the cooked meal with the paprika.
Ingredients
1/2 pound boneless salted codfish
1/2 cup vegetable oil
4 cloves garlic, finely chopped
1 sprig fresh thyme
2 onions, sliced
4 scallions, chopped
1 cup sliced assorted bell peppers (red, green, yellow, orange)
1/4 Scotch bonnet pepper, finely chopped with seeds removed
1 (20-ounce) can ackee, drained
1 teaspoon freshly ground black pepper
1 teaspoon paprika

Sweet Potato Pudding Directions
  • Peel cut and grate sweet potatoes and place in a large mixing bowl.
  • Add dark sugar, flour and raisins.
  • Combine Grace Coconut Milk Powder with water, mix well and add to the sweet potato mixture.
  • Add melted margarine, nutmeg, salt, cinnamon powder, vanilla, rum, lime juice and browning and mix well.
  • Scrape mixture into a greased 10inch baking tin.
  • Bake in a pre-heated oven 350 F or 180 degrees C for 1 1/2 - 1 3/4 hours.

Note: 5 pounds sweet potato will yield 12 cups when grated.

  • 1 tablespoon(s) lime juice
